Mmmm Pea Soup


I just love Nigella's pea soup recipe from the Nigella Express TV show. It's such a great winter warmer and so quick and easy, just the way i like it! And just look at how pretty and green it turns out, that's my generous portion up there.

Ingredients:

 frozen peas
spring onion
pesto

Cooking Method:

Place peas in a cooking pot with some hot water to just cover the peas. Place your spring onion in the same pot (if you don't have spring onion, small brown onion works just as well, it's what I used, peel the onion if you plan to leave it in the mixture - see next step). Heat the pot until the water is just about to boil.

Then take out the spring onion (I used a peeled small brown onion and left it in because I prefer a stronger flavour), pour the water with the peas (and your onion if you left it in) into a blender. Add a spoonful of pesto, supermarket is fine, Nigella uses the fresh kind. Blend until creamy smooth.

And Voila! Ready to serve/eat. Enjoy!
